Since Huron the Slow Juicer has come into our lives we’ve had to come with ways to use all this carrot pulp we have. Here’s another recipe that has quite a different taste then our Carrot Patties.
Carrot Falafel
2 cups carrot pulp
1 cup sesame seeds
2 tbsp ground flax seed
Right. So, I’ve no paycheck, all my clients had decided to disappear, I’m left with receding supplies in the fridge, and a hungry-demanding Bear to feed, not to mention my own yappy tummy.
Thank God to dry food supplies and a simple recipe, I made it to make Bear happy. He already said many times that ‘I love that barley thingy you made once, how come you never make it again?’ When I found this recipe in ‘Everyday Food’ mag, I was on it in no time.
The real recipe required celery which I didn’t have so I replaced it with soybean and I also replaced the chicken with chunky smoked beef slices that I diced into bits. I didn’t use baby spinach as it’s quiet a rare veggie to find in this country, so I just used the local spinach, which was more fibre-ish and chewy. Plus, I used beef stock in stead of chicken. I find it more yummo with beef stock.
So here it is: My Smoked Beef Barley Soup, an adaptation to the Everyday Food mag’s Chicken Barley Soup.

I loved adding crushed peanuts (or cashews or pistachios) to enhance the flavor.

It’s the easiest thing I’ve ever cooked! I loved it, Bear loved it. Lunch for today was done easy.
